

Today I made a very common side dish (banchan) of bean sprouts. It’s a quick and easy one to make and is delicious with lots of different foods. It is especially good if you are going to do any grilling, like samgyeopsal, you are able to grill the side dish with the meat and it is super good all warm. ** Note this side dish doesn’t keep well like others, so eat it fast before it goes bad**
Bean Sprout Side dish
200 g bean sprouts (kong namul)
1/2 tsp salt
2 tsp sesame oil
2 tsp garlic (minced or crushed)
1 tsp toasted sesame seeds
1 tsp red pepper flakes (optional)
1 green onion finely diced
1 tsp soy sauce
Wash the bean sprouts in water. Just a quick wash to rinse off anything gross that is on them, remove any parts that have gone bad. Place sprouts in a steamer, and steam for 10-15 minutes until the bitter taste is gone. You will need to taste test them to see when they are ready, trust me you will be able to taste the bitterness. If you don’t have a steamer, you can boil the sprouts in water for about 5 minutes, then you will have to let them cool a bit and squeeze the excess water from the sprouts. If you have steamed them you do not have to remove any excess water, so I prefer steaming. There is less squeezing involved and the sprouts stay crispier. Mix together the sauce ingredients. Add them to the cooked sprouts in a bowl. Mix them together and you are finished. You may serve them immediately or put them in a container and save the side dish for later.
